One day closer to my goal…

I knew this was going to be a tricky day the moment I woke up and realized I slept well over what I anticipated. But yet I thought I would have time to go for a quick run at the gym even though we were leaving for a hockey game up in Kenosha followed by our usual shopping spree at the outlet mall. When I was on my way to head out the door Freddie told me that I wouldn’t make it before we had to leave, instead I prepared lunch as I had 500 grams of chicken that just waited to be marinated in a very yummy marinade.  I used my wok and kept about 100 grams to the side knowing I was not going to be near anything protein-like in a very long time and it came very handy between the hockey-periods accomplished with the old Starbucks.

As you always do we got home way later than expected but on the bright side I already had decided a very simple dinner, Pesto salmon with roasted veggies. One thing I am very well aware of when it comes to be so strict with a diet and make it work it’s that it needs to be edible for the rest of the family, especially when you have a 5-year-old that lives of pure carbs. So I made pasta with the grandmother famous fish crème sauce that the kids cannot resist as well I kept part of the fish pesto free. After dinner I just wanted to crash in the sofa and watch all my crappy TV shows but I’ve decided that Sunday is no longer a recovery from Saturday night, it is now a day to get one day closer to my goal. Still crazy sore from Fridays workout I dragged myself to Lifetime Fitness and did 20 min on the elliptical and 20 min interval running on the treadmill and at the end I was surprised that it actually didn’t hurt as bad as I thought it would.
