Pizza Date Night

Earlier this week I went to Costco and could not believe my eyes when I saw they already brought out the Christmas decoration and what I thought was even more weird was that there were people putting the stuff in their carts!

Anyhow at my house the summer is far from over so last night me and Freddie had a “Pizza Date Night” on the patio before Laura and her crew came to join us for a glass of wine.

Low-Carb Pizza Dough

4 eggs

100 grams Parmesan Cheese

2 tablespoons Phyllium Husk

0.75 Deciliter Water

Tomato sauce

1 can Tomato Sauce

Fresh Chopped Tarragon

Garlic Powder

Salt and Pepper

Topping

Mushrooms, olives, marinated garlic, ham, cheese

Whisk all the ingredients together and let it “rest” for 5 minutes. Spread it put on parchment paper and bake in the oven for 5-10 minutes or until it as a nice surface to it.

Add the topping and bake it again until the cheese has melted.

I served this with home made coleslaw and a nice glass of Cabernet Sauvignon…

Homemade Coleslaw

Cabbage

Red onion

Garlic

Mayonnaise (recipe https://mrsmalin.com/2013/04/29/alabama-drumsticks-so-easy-and-fool-proof/ )

Dijon mustard

Vinegar

Salt and pepper

 

I grabbed what I had…

Freddie is out of town this week and I am trying to get organized before our own trip so for yesterday’s dinner I grabbed what I had and it turned out to be a great Grilled Chicken Salad with mozzarella and coleslaw.

2 Chicken Tenderloin

1 chopped garlic clove

1-2 tablespoon of vegetable oil

1 tablespoon soy sauce (gluten-free)

splash of Kalvfond or Better than bullion

salt and pepper

Mix all the ingredients and let the chicken rest in the marinade for 20 minutes (longer if you have the time. Grill the chicken until it thoroughly cooked. I served this with grilled asparagus topped over arugula and some of the homemade coleslaw I had leftover from our saturday picnic. I also found some mozzarella, tomato cucumber and basil that I threw in the mix…Sometimes you just have to work with what you have and it can turn into a gourmet dinner  😉

Picnic with Sting…

What an absolutely lovely evening we had last night and non of my swedish friends disappointed as we always have a cracking time when we hang together, nor did Sting or the Blackhawks!!!

But before we made it up to Ravinia I had to prepare our dinner that turned out to be an unbelievable yummy low-carb wrap with homemade coleslaw…a summer picnic winner!

Low-carb Bread Wrap

4 Eggs

0.75 dl/ 0.3 cups Almond flower

0.5 dl / 0.2 Psyllium husk

1 dl / 0.4 cups small curd Cottage Cheese

Salt

Mix all the ingredients together in a mixer and let “rest” so the psyllium can swell. Set the oven on 200C/400F and place the paste between two sheets of parchment paper and bake in the oven for 5-10 minutes.

I filled my wraps with a high quality roast beef, cucumber, tomatoes, cheese, olives, sun dried tomatoes and off course the homemade coleslaw
