Lean Meat Bolognese and very tried legs

So not working out with my girls is a new experience as I am ending up workout mostly on my own. I miss them tremendously (but I still will see them like I use too) but I think I am so focused of making good classes that will challenge them as well as they are well thought-out workouts so it is actually ok just being me and pushing myself like I always do.

Yesterday I went to workout over at lifetime to try out tomorrows session and because I am timing everything I do I don’t have time to chat to the lad next to me who is waiting for his muscles to recover! Not that I am ever so chatty when workout, just ask the girls. I finished another total body workout and even when the focus laid on the upper body walking down to the kitchen this morning was a struggle not to mention the spinning class!

The rest of the day I spent studying resistant training and by the time I picked up the kids from school I was starving. Today is my #2day i.e. my fasting day and I am sticking to my 500 calories so it was very convenient that I had already made a delicious low-carb, low-calorie Bolognese yesterday, just as recommended when following the 5:2 diet. ( I do eat as normal the other 5 days, way over 500 cal)

200 grams makes 283.5 calories

2 lb./907 grams Minced Turkey (or chicken)

6 oz/175 grams Tomato past

3.5 /100 grams Chopped Onion

Garlic Clove

Water

Chanterelle Bullion

Paprika Powder

Thyme

Juniper Berries

2 tablespoons Sour cream

Salt and Pepper

How to:

Fry the Turkey together with garlic and the chopped onion. Add the tomato paste, chanterelle bullion, water together with the spices and herbs and let it simmer for 20 minutes or so.

      Mix the sour cream and serve with zero noodles it only has 15 calories/serving.

I sprinkled some feta cheese on top to reach my 500 calories.

Enjoy because Mira certainly did as she brought it to school for lunch and she is a picky eater 😉

 

 

5:2 Grilled Chicken with lentils and feta

So it’s been a while since I posted any recipes but I guess things has just been crazy lately. But tonight I made my 5:2 diet dinner with 500 calories and I was surprised how much food I actually ended up eating. This is my fifth week doing this and it supposedly it has a lot of health benefits (www.thefastdiet.co.uk). And with that being said I do feel great but I will admit that the first two weeks I was constantly thinking about food on my fasting days and could not wait until it was over but I don’t anymore…

chicken lentils

1 portion

Grilled chicken (479 calories)

250 gram Chicken breast 187.5 cal

salt

Pepper

cayenne pepper

Garlic powder

Tomato Lentil sauce

1/4 cup green lentils 140 cal

4 oz / 114 grams tomato sauce 12 cal

5 fresh chopped basil leaves 4 cal

salt

pepper

Chili flakes

Feta Salad 

30 grams arugula 12 cal

100 gram cucumber 12 cal

2 slices of red onion 12 cal

10 cocktail tomatoes 30 cal

28 grams Feta cheese 70 cal

1/2 tablespoon Champagne vinegar 2.5 cal

 How to: This is dead easy, season the chicken and grill it on the bbq. Boil the lentils for 5 minutes, rinse and add them into the tomato sauce. Season the sauce and let it heat up serve your dinner with the salad and feta cheese!

 

A date night with File mignon and a Moroccan Salsa

Last christmas I got a book called perfect pairings by Evan Goldstein. I love wine but I don’t know too much about it but last night I picked up the book and started to flip through it when I thought I would carefully make my choice of wine to compliment the food

Goldstein mentions that Merlot goes well with grilled food as well as citrus and green vegetables, tomatoes  and garlic and fresh herbs.

So I went to Fresh Food Market and picket out a nice cut of filet mignon and a bottle of Merlot from Chateau St Jean and started to prepare our dinner.

Moroccan Salsa (recipe by Jonas Brossen) 2 servings

1 Big Chopped Tomato

2 tablespoons of Chopped Red onion

1 clove of chopped garlic

1/4 chopped Jalapeño

1 teaspoon Cumin

2 tablespoons Chopped Fresh Cilantro

lemon juice

2 tablespoons of a good Olive oil

Mix the ingredient together and store in a cool place until serving.

 I love my meat medium raw and Freddie grilled the it to perfection so when it was time to eat I served the meat and the salsa on a bed of Arugula and roasted fennel, red onion and asparagus topped of with a balsamic glaze.

A quick summer lunch full of antioxidants

After a tough workout I came home and I was starving so I quickly put some chicken tender on the grill, sautéed mushrooms and kale and mixed together a cold fresh chimichurri sauce…yum!

Grilled Pork Tenderloin with a Spicy Mango Salsa

My sister is an amazing cook and this evening she served from her back pocket a grilled pork tenderloin with a spicy mango salsa with roasted vegetables…

Pork Tenderloin

2 pound /1 kg Pork tenderloin

CajP Marinade (A Pre-made marinade)

Fresh lime juice

Salt and pepper

Spicy Mango Salsa

1/2 Chopped Mango

1/2 Fresh lime juice

2 1/2 tablespoons Sweet Chili Sauce

2 tablespoons water

salt and pepper

Roasted Vegetables

Broccoli

Cauliflower

Red Bell Pepper

Mushrooms

Yellow Onion

Garlic

Asparagus

Squash

Spinach

How to: Marinate the pork tenderloin in the marinade and squeeze the lime juice over the meat and salt and pepper. Grill it on the grill until the meat is thoroughly cooked.

Dice the Mango and mix in the sweet chili sauce with the water, lime and spices and store at a cool place until it is time to serve.

Chop all the vegetables and roast in the oven until done at 225C/ 440F.

I grabbed what I had…

Freddie is out of town this week and I am trying to get organized before our own trip so for yesterday’s dinner I grabbed what I had and it turned out to be a great Grilled Chicken Salad with mozzarella and coleslaw.

2 Chicken Tenderloin

1 chopped garlic clove

1-2 tablespoon of vegetable oil

1 tablespoon soy sauce (gluten-free)

splash of Kalvfond or Better than bullion

salt and pepper

Mix all the ingredients and let the chicken rest in the marinade for 20 minutes (longer if you have the time. Grill the chicken until it thoroughly cooked. I served this with grilled asparagus topped over arugula and some of the homemade coleslaw I had leftover from our saturday picnic. I also found some mozzarella, tomato cucumber and basil that I threw in the mix…Sometimes you just have to work with what you have and it can turn into a gourmet dinner  😉

Picnic with Sting…

What an absolutely lovely evening we had last night and non of my swedish friends disappointed as we always have a cracking time when we hang together, nor did Sting or the Blackhawks!!!

But before we made it up to Ravinia I had to prepare our dinner that turned out to be an unbelievable yummy low-carb wrap with homemade coleslaw…a summer picnic winner!

Low-carb Bread Wrap

4 Eggs

0.75 dl/ 0.3 cups Almond flower

0.5 dl / 0.2 Psyllium husk

1 dl / 0.4 cups small curd Cottage Cheese

Salt

Mix all the ingredients together in a mixer and let “rest” so the psyllium can swell. Set the oven on 200C/400F and place the paste between two sheets of parchment paper and bake in the oven for 5-10 minutes.

I filled my wraps with a high quality roast beef, cucumber, tomatoes, cheese, olives, sun dried tomatoes and off course the homemade coleslaw

Low Carb Pasta Bolognese with Cinnamon!!!

Ever since we got a new grill I have hardly been cooking at all on the stove but yesterday I did a Pasta Bolognese that was just heavenly, heavenly, heavenly….

1 pound/ 500 grams minced beef

1 Onion

3 or more chopped garlic clove

Mushrooms

1 small can of tomato paste

splash of Bong Kalv fond or Better than bullion

Paprika powder

salt and pepper

Cinnamon

Water

Splash of cream

How to: Fry the minced beef  together with the onion, garlic and the mushroom add the rest of the ingredients and let it simmer for 10-20 minutes (depending of how mush time you have). I did not use to many different spices as the cinnamon was so dominated in the dish. I served my Bolognese with Shirataki fettuccine and an arugula salad.

I normally don’t eat too much dairy and if I do I prefer to use goat milk products but I have not found goat cream. Does anyone know what store would sell it in the Chicago area, I would love to get my hands on it 🙂

 

Grilled steelhead with a super salad and Garlic Romesco

Steelhead or rainbow trout is a fish that I recently started to cook with, it is very similar to salmon in both texture and taste but it is cheaper than salmon. Yesterday I had come a cross a great recipe with grilled salmon and a bean salad. I made a few modifications and we ended up with a very fresh and delicious dinner that was loaded with vitamins and nutritions.

1 steelhead

1-2 teaspoons of cumin

salt and blackpepper

Salad

fresh Green Beans

broccoli

leek

kale

mushrooms

cocktail tomatoes

Arugula

Red onion (optional)

Feta Goat cheese (optional)

Dressing

1 tablespoon Olive Oil

1 tablespoon Balsamic Vinegar

1 tablespoon Dijon Mustard

1 clove of garlic

salt and pepper

Garlic Romesco

1/2 cup or 1 dl Almond flour

1-2 chopped garlic cloves

1-2 tablespoon Red wine Vinegar

2-3 tablespoons Olive Oil

Chili

Salt and pepper

How to: Star with mixing all the ingredients for the garlic romesco sauce together and place it in the fridge until it is time to serve the dinner.

 Rinse the steelhead and ry it off with a paper towel, sprinkle the cumin, salt and pepper and grill it until the meat is thoroughly cooked.

Meanwhile sauté the all the vegetables except the arugula and garlic and just before it is time to serve up on the place mix the warm vegetables with the arugula, red onion and the feta cheese.

 

Grilled sirloin tip steak with basil vinaigrette tossed vegetables

This is the season to take advantage being able to eat clean and with a new grill I try to cook as much as possible outside and in between the thunderstorms Freddie managed to cook a sirloin tip steak to its perfection…

1 pound of sirloin tip steak

Old world central street seasoning (from the spice house)

Garlic powder

Vegetable Oil

Basil Vinaigrette

1-2 tablespoon Vegetable Oil

1 tablespoon White Wine Vinegar

2 teaspoon Dijon mustard

1 chopped garlic

Salt and Pepper

Chopped Basil

Roasted Vegetables

Yellow Zucchini

Red pepper

Mushrooms

Asparagus

Red Onion

Tomatoes do not roast!

How to: Cut up all the vegetables and roast them in the oven for about 10-15 min @ 350-400 F. Grill the meat to you liking and meanwhile mix all the ingredients for basil vinaigrette and as soon as the vegetables is done mix the tomatoes and toss the vinaigrette over the roasted vegetables.
