Indian chicken stew

500 grams Chicken

Olive oil

1 chopped yellow onion

1 chopped garlic clove

1 tablespoon curry

2 teaspoons cumin

1 tablespoon turmeric

4-6 chopped tomatoes

5 deciliter chicken broth

Broccoli

1 deciliter sunflower seeds to be sprinkled on top

(Greek Yogurt)

Chop the chicken into pieces and fry it so you get a nice browning of the chicken. Add the onion, garlic, curry, cumin, turmeric and fry for another couple of minutes. Add the tomato and chicken broth and bring to a boil for 15 minutes and add the broccoli for the last few minutes to make it chewy.

Indian chicken stew

For the rest of the family I boiled rice and served it with Greek yogurt. I tried to avoid the actually sauce because the broth has starch and carbs in it, but unless you are very strict as I am right now I don’t think it will matter.
